Elva Norman’s Black Walnut Jiffy Cake

2 cups sugar
2 sticks butter, softened
2 cups flour, sifted
1/4 tsp. salt
1 tsp. vanilla extract
1 tsp. lemon extract
1 cup Black Walnuts
5 large eggs


Lemon Glaze:
1 tsp. lemon extract or 2 tsp. lemon juice
1/3 cup hot water or 1/2 cup melted butter
2 cups confectioners sugar
1 tsp. vanilla

Buy Black Walnuts


Preheat oven to 350 degrees. Add the above ingredients into a mixing bowl and beat at high speed for 5 minutes. Pour into a greased and floured tube pan. Bake for 1 hour and test cake with a toothpick. If needed, bake for an additional 15 minutes.

Mix together the lemon glaze ingredients and drizzle over cake. If needed, add more liquid to glaze.  Sprinkle lightly with Black Walnuts.
